This time of year lots of you are probably getting loads of zucchini from your garden and need some ways to use it so that it is not wasted. The summer months are a time when zucchini is in abundance! Because it’s easy to grow and has a long growing season, it is often found in most gardens. And it’s delicious! Personally, one of my favorite ways to eat zucchini is sauteed with some onions, garlic, and olive oil. It’s a great lunch or side dish for dinner. But, you can only eat it so much before you get tired of it and need another recipe for zucchini!
