Fresh Salsa
If you have a garden and have an over-abundance of tomatoes – then you need to make some fresh salsa 🙂 It’s the perfect way to use up your tomatoes and it’s such a refreshing dip with tortilla chips!
One of the keys to getting a good salsa is to make sure all your veggies are finely chopped. The tomatoes and onion especially should be diced nice and tiny . . . big chunks are kind of a pain to try to pick up with a chip!
So, to start off with I always like to make sure I get all the seeds out of my tomatoes. I don’t want my salsa to end up tasting . . .
- Quarter the tomatoes.
- Run your finger along the spine of the quarter to remove seeds (you may need to use a small knife).
- Make sure all the seeds and juicy stuff is out (you don’t want the salsa to be mushy and soggy).
Now, dice up the tomatoes, onions, and garlic nice and teeny-tiny. Tear up some cilantro leaves – lots of them – in my opinion, you can never have too much cilantro in salsa 🙂 I’m really excited – I recently started growing cilantro!! I can’t wait to start making lots of Mexican dishes!
Alrighty, next, add some chili powder, a little bit of cumin, salt, pepper, and lime juice. Lime zest, jalapeño, corn, black beans, or green pepper would be wonderful add-ins!
Mix everything together – let it sit for a couple hours to let all the flavors marry together.
Serve with tortilla chips and enjoy!
