Summer is the perfect time for popsicles! These peaches and cream popsicles are yummy, satisfying, and also healthy!
As a mom of four, I am often looking for snacks for my kids that are healthy and filling (so they don’t come back in an hour asking for another snack, ha!). A lot of the recipes I’ve seen are healthy, in that they are basically just pureed fruit with some juice or water, but we know that adding protein is essential to keeping the kids (or us!) full for a longer amount of time. (Another benefit of adding protein is that it keeps all the sugar from the fruit from spiking your blood sugar as much as it does without it – so bring on the protein!)
So here it is — super simple:
Healthy Peaches and Cream Popsicles
You’ll need 3 peaches, 2-3 T. honey, 1/2 c. cottage cheese, and 1 c. liquid.
Overripe peaches work best because they’re extra-sweet. Plus, no one really wants to eat them anyways, so it’s better to just put them into the blender. 😉 How much honey you use will depend on how sweet your peaches are.
Cottage cheese is full of protein, vitamins, and minerals! I don’t like to eat it because of the texture (gag!), but once it’s blended, I can take advantage of its nutritional benefits. 🙂
For the liquid, I used some unsweetened iced tea that I had in the fridge, — papaya pineapple flavor, which is SO tasty — but you could also use juice or water. (FYI, when I use water, I add a dash of sweetener, too!)
Put all the ingredients into a blender, and blend it until smooth.
Taste-test!
At this point, I taste what I just blended and see if it needs to be sweetened more. It’s your last chance to make it sweeter! 😉 (Our favorite sweetener is this type of Stevia — no bitter aftertaste like Stevia in the Raw, and you only need a dash!)
Now, pour the peaches and cream popsicle mixture into the molds.
How many popsicles this recipe makes depends on the size of your popsicle molds, and there are so many different ones out there.
My four-year-old loves to help me in the kitchen, so I let him stick the popsicle sticks into the molds. 🙂
What I do when I have extra popsicle mixture left is freeze it in ice cubes to put in smoothies!
