NO BAKE CHOCOLATE OATMEAL COOKIES
If you’ve never eaten no bake chocolate oatmeal cookies . . . um, all I can say is how much you’re missing out! We have been making these things for years and years and years. If you can’t tell, we LOVE these babies!! It’s one of those recipes that we usually have the stuff to make, and if we want something to satisfy our sweet tooth, we can whip these up in just about 5 minutes!

And how can you go wrong with peanut butter and chocolate? Then add in some oats and you’ve got pure delectableness! Ha! And, now I’m salivating wanting to eat one! Hm, maybe I should go check the pantry and see if I can whip up a batch.
What’s so great about these is that I don’t have to turn the hot oven on to make them! And when you live in Arizona, when it’s currently 113 degrees –eeek!!, you avoid turning the oven on at all costs!
In a large mixing bowl, combine the quick oats, vanilla, and peanut butter.
Using two forks, cut the peanut butter into the oats until coarse crumbs are formed.
In a medium saucepan, combine the butter, sugar, milk and cocoa.
Heat over medium heat until rapidly boiling, stirring constantly.
Boil for 2 minutes.*
*TIP HERE– If you are working in a hot, humid kitchen you’re going to need to let it boil for 3 to 4 minutes. Otherwise, your cookies won’t set, and we wouldn’t want that. Two minutes is your minimum boiling time.

Working quickly, pour the mixture over the oat/peanut butter mixture and stir until combined.
Drop by spoonfuls onto wax paper.
This recipe makes approximately 20-24, it just depends how big of spoonfuls you drop.
Let sit on the wax paper until cookies are set.

- 1 stick butter (not margarine)
- 2 cups sugar
- 1/2 cup milk
- 4 Tbs. cocoa
- 3 cups quick oats
- 2 tsp. vanilla
- 1/2 cup peanut butter
Instructions
- In a large mixing bowl, combine the quick oats, vanilla, and peanut butter. Using two forks, cut the peanut butter into the oats until coarse crumbs are formed.
