A Simple Summer Coleslaw Recipe
What I love about this coleslaw recipe is how EASY it is to adjust to how much you need!
All you need to know is the proportions of mayo to sugar to vinegar per pound of coleslaw.
For 1 lb (16 oz) of shredded cabbage mix, I use 1 cup of mayo, 1/2 cup of sugar and 1/4 cup of apple cider vinegar.
So, if I needed a little more than that and wanted to do 1.5 lbs of shredded cabbage, I would use 1.5 cups of mayo, 3/4 cup of sugar and 3/8 cup of apple cider vinegar.
If you need a big batch for a crowd and need to do 5 lbs. of shredded coleslaw, you would use 5 cups of mayo, 2.5 cups of sugar, and 1.25 cups of apple cider vinegar.
So, no matter what your need, you can easily convert this simple summer coleslaw recipe to just what YOU need!

Here’s what you need:
- shredded cabbage mix (either a convenient ready to go bag or shredded yourself; I like to use the shredded cabbage with carrots)
- mayo
- white granulated sugar
- apple cider vinegar
Pour the cabbage mix into a bowl.
In another bowl or glass measuring cup, whisk the mayo, sugar and vinegar together until smooth.
(these Pyrex glass measuring cups are the BEST! If you don’t own any, you should add them to your kitchen collection 🙂 )
Pour the dressing over the cabbage and stir to combine.
Cover and refrigerate a few hours before serving.
Give it a nice stir before serving and then enjoy!
