I don’t know about you, but whenever I want to make a special treat for my husband {who deserves lots and lots of them!}, I find myself always going for something… peanut butter. It is just his all-time favorite. And these Reese’s Lover Cupcakes sure hit the spot!
If you’ve never made Peanut Butter Buttercream, wow are you missing out on something incredible. Check out the recipe below!
I started with my favorite ‘top-secret’ chocolate cake recipe. Then I piped a big swirl of creamy PB frosting on top, sprinkled with chopped reese’s, drizzled with ganache and topped with an adorable piped chocolate heart. Sounds complex, but it is really a quick, yet stunning dessert.
For the delectable Peanut Butter Buttercream, you’ll start by creaming your margarine and shortening, then adding the PB and beating until thoroughly smooth and combined.
Slowly beat in your powdered sugar. Then add some milk and vanilla extract and beat on high for a couple minutes to get it ‘whipped’ and light.
I used the large Wilton cupcake tip that you can find here and piped a big swirl on top! I like to make my frosting mounds pretty tall for that wow factor. I mean, who isn’t drawn to a gorgeous cupcake that looks way too rich and delicious?
Grab a bag of reese’s and chop them up to sprinkle on top of the frosting mound. Yum!!
For the ganache drizzled over top, mix some chocolate chips and cream (I used some fat free half and half) and a tiny bit of butter, and melt in the microwave. I poured it into a sandwich bag and snipped a tiny corner off. You’ll want to make sure you cut the opening very small, so the chocolate doesn’t come pouring out and you area able to get a pretty drizzle.
Now, at this step, your cupcakes should look pretty amazing, but if you want to put them over the top, pipe some cute hearts on wax paper or foil with melted chocolate chips. Once they harden, stick them in the top of the cupcake and Ta-Da! HOW AMAZING!!!
