CHOCOLATE RASPBERRY LAYER BROWNIES
Valentine’s Day brings many lovely things, but one of the best things it brings is chocolate and LOTS of it!!
In fact, according to one statistic, 58 million pounds of chocolate will be purchased the week before Valentine’s Day. That is a LOT of chocolate! š

If you want a lovely Valentine dessert to make at home, you can’t go wrong with these amazing chocolate raspberry layer brownies! You might look at these and think, nope, that would take way too long to make. Haha. . . . nope! They might look hard to make, but I’m telling you, these are one of the easiest things to make ever.
In about 3 minutes, I had the brownie layer made and in the oven. That’s no joke!
Wilton makes these square baking pans with lids. That makes it SO convenient for transporting!
This simple recipe is one of our family’s favorites! The rich brownie layer, the creamy sweet filling and then the chocolate top layer is to die for! They are rich so we usually cut them pretty small. Think of a rich truffle; they are THAT good!

I like to put these in cute cupcake wrappers as individual desserts. You can even put them on a cupcake stand or tiered serving stand for a gorgeous way to display them!
CHOCOLATE RASPBERRY LAYER BROWNIES
Chocolate Raspberry Layer Brownies
Ingredients
- BROWNIE LAYER:
- 2 (1oz) squares unsweetened chocolate
- 1/2 cup butter
- 1 cup sugar
- 3/4 cup all purpose flour, sifted
- 2 eggs, slightly beaten
- 1 tsp. vanilla extract
- RASPBERRY CREAM LAYER:
- 1 3/4 cups powdered sugar
- 2 Tbsp. soft butter
- 2 Tbsp. heavy cream
- 1 tsp. raspberry extract
- pink food color
- CHOCOLATE TOP LAYER:
- 1/2 cup semisweet chocolate chips
- 2 Tbsp. butter
- 1 tsp. vanilla extract
- 1 Tbsp. shortening or coconut oil*
Instructions
- For the brownie layer, melt butter and chocolate over low heat. Mix flour and sugar and add to the chocolate mixture. Add eggs and vanilla. Pour into a greased 9 in. square pan. Bake at 350 degrees for 20 minutes. Cool.
- Combine the raspberry cream ingredients and beat until smooth. Spread over brownie layer. Chill until firm.
- For the chocolate top layer, combine all ingredients and melt over low heat until smooth. Spread over brownies.
- Let chill before cutting.
- Optional-top each brownie square with a raspberry and sifted powdered sugar.
Notes
*I've found that using the coconut oil helps the chocolate top layer not to crack when you cut them.
I like to get the pan of brownies out of the refrigerator and let sit for about 10 minutes before cutting them.
