I recently had to make cakes for my kids’ birthday parties but I am not a cake maker. I really wanted to make a delicious cake that people would remember as being delicious, and not just a dry boxed cake mix.
I searched around and found some really delicious doctored boxed cake mixes and they were such a hit! Everyone at the parties said they loved the cakes and asked if they were from scratch, they were that good 🙂

What does adding sour cream to a cake mix do?
- Sour cream is one of the fattiest dairy products; the extra fat content (for example, adding sour cream to a cake instead of milk) will make the cake moister and richer, says Wilk. “Fat, in any form (butter, lard, cream, etc.) shortens gluten strands, which essentially leads to the most tender baked goods,” she adds.
Why add an extra egg to a boxed cake mix?
- Because eggs help build the cake’s structure (don’t use them and you’re looking at a gooey mess), adding an extra egg yolk makes the cake batter denser. Translation: you’ll have a moister confection. Conversely, Mandonesia Carter suggests an extra egg white for a fluffier cake.
What does adding pudding mix to a boxed cake mix do to the batter?
- The mix adds additional flavor, moistness, and a denser texture. Be sure not to *make* the pudding mix – just add the packet of powder straight into the cake batter.
