This Easy Broccoli Casserole is top on my list of comfort foods. It is perfect for holiday meals, potlucks, company, etc! And it makes a nice full 9×13 pan, so it really is nice to make for a group of people. You can easily halve it and bake it in a square pan though, if you don’t need so many servings.
Broccoli, believe it or not!, is one of my kids favorite vegetables. They like it steamed, roasted, or even raw with ranch. For this recipe, I just cook it on the stove in some boiling water for a couple minutes. You’ll want it to still be firm, because it will continue cooking during the baking.
Broccoli with creamy cheesy sauce and topped with butter crispy ritz topping really is a falvorful comfort dish.
Serve it as a side or turn it into the main dish by adding some cubed chicken or smoked sausage.
Casseroles are great for weeknight meals when you don’t want a lot of clean up, or when you need to transport a meal or make a meal for someone. This is also perfect for comfort meals and Sunday suppers!
If you need a main dish that goes amazing with this easy broccoli casserole, try our flat-roasted chicken. It’s delicious!!!
Ingredients needed to make this dish:
- Fresh broccoli florets (a whole 12 cups!)
- cream of mushroom soup (any condensed cream soup would work!)
- sour cream (makes the moistest creamiest sauce)
- eggs
- cream (heavy whipping cream or half and half)
- butter
- herbs and spices
- cheddar cheese
- Ritz crackers
This casserole needs to bake in a deep 9×13 dish. Like THIS ONE! I love the speckling with the matte ceramic bottom. Perfect for so many styles.
Frequently Asked Questions
Does this dish need to bake covered?
No,this easy broccoli casserole will bake uncovered. Covering it would cause it to be too saucy as the liquid would not evaporate. It would also keep the topping from getting crispy! So, definitely keep this dish uncovered while baking!
Can I halve this recipe?
Yes, for sure! To halve this recipe, you can use a 9×9 casserole dish. Since I make this for gatherings and holidays, I like the large amount the recipe makes. But for a weeknight meal, I halve it. It is just as easy!
How do I know when the casserole is done baking?
The main thing you want to check is the broccoli! Too firm or too mushy isn’t going to taste good. So, as soon as the broccoli is crisp, but tender, you’ll want to pull it out. The sauce will thicken slightly as it cools, so focus more on the tenderness of the broccoli.
How long does it last?
Allow the leftovers to cool and store them in the fridge for up to 3 days. To reheat, you can place the dish uncovered in the oven at 350° until it is warmed. Or simply, reheat a serving in the microwave.
I just love this Easy Broccoli Casserole!
