Our Grandma made the yummiest teddy bear molasses cookies to hang on her tree. All of us kids loved them, and I make the same cookies for our family today. When I made this Gingerbread Coffee recipe, it immediately reminded me of her cookies!
I love some fun coffee! One of my favorite things about the winter months is trying different coffee flavors and recipes. This Gingerbread Coffee is the easiest little recipe… upgrade your coffee at home with just a few ingredients and a few minutes, and you will have a warm cup of a cozy cheery pick-me-up!

If you’re looking for a fun coffee maker that’s not over the top expensive, this Ninja coffee maker may be the one for you! I love the ‘over ice’ feature for cold coffee on summer afternoons. The ‘specialty’ feature brews a small amount of very strong coffee to imitate espresso. One of my favorite parts is the built in milk frother on the side. It is so easy to use and so simple to clean.

To make this Gingerbread Coffee, I added some spices to my coffee grounds.
And I put some brown sugar and molasses in the empty carafe.
When I brewed the coffee, all those flavors blended together. I swirled the coffee in the pot just enough to make sure everything was completely mixed together. Then I simply added some half and half.. and oh my! It was SOOO delicious!!
To make my Gingerbread Coffee even more of a treat, I added a bit of whip topping and sprinkled some cinnamon on top.
Winter afternoons are so much more fun when a warm caffeinated drink is involved. 🙂
Gingerbread Coffee
Ingredients
- 1/3 cup coffee grounds
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 2 Tbs molasses
- 1 Tbs packed brown sugar
- 3 cups water
- half and half
- whipped topping
Instructions
- Place coffee gounds and spices in brew basket.
- Add molasses and brown sugar to empty coffee pot.
- Brew 3 cups of coffee, and swirl pot until blended.
- Stir in cream, and top with whipped topping and cinnamon.
