Summer is right around the corner and that means it’s time to get your grills out and fired up! Try these Grilled Rib Eye Steak Sandwiches this summer – they’re sure to be a big hit!
Grilled Rib Eye Steak Sandwiches
I love grilling out in the summer . . . there’s nothing like a delicious, juicy, grilled rib eye sandwich paired with a fresh summer salad and a glass of lemonade. Back when all of us sisters were together for a little while a few months ago, the temperature warmed up (barely) so we decided to fire up the grill and make these yummy sandwiches. We toasted the onion buns to give the bread a delicious crispy edge, and we also grilled onion slices after we brushed them with oil and spices. After everything was grilled and toasted, we layered the meat, onions, and cheese on the toasty bun and drizzled some steak sauce on it . . . mmmm so good!
Start by toasting the buns in a little butter over medium heat until browned and crispy.
Next, cut the onions in thick slices and skewer them.
Next, mix the oil with salt and pepper.
Brush the oil over the onions.
Grill the rib eyes for 3-4 minutes per side (or longer if you like your meat well done). While the rib eyes are grilling, grill the onions until grill marks appear.
Now it’s time to layer up your sandwiches!
Layer a piece of provolone, a grilled onion, and a juicy rib eye steak on your crispy onion bun. Drizzle with a little steak sauce over the steak and you’re finished! Serve these sandwiches up with a fresh salad for the perfect summer meal.

Ingredients
For the buns
- 8 onion buns
- 3 T. butter
For the onions
- 2 purple onions
- olive oil
- 2 tsp. salt
- 2 tsp. pepper
For the meat
- 8 4-ounce rib eye steaks
- steak sauce
Instructions
- Toast the onion buns in 3 T. butter over medium heat until browned. Set aside.
- Slice onions into thick slices and place on metal skewers.
- Mix oil, salt, and pepper and brush over the onions. Grill until marks appear.
- Grill rib eyes for 3-4 minutes per side while the onions are grilling.
- Layer the meat, onions, and cheese on the toasted onion buns. Drizzle with steak sauce if desired.
