Mini Fruit Pizzas (Fourth of July)
I made these mini fruit pizzas for a Fourth of July celebration recently and they were such a hit! I loved using the blueberries and strawberries to make these Americana. You can use any types of fruit for these though and they’re still delicious and beautiful 🙂

Mini Fruit Pizzas
With a sugar cookie crust, a creamy and fluffy topping, juicy berries, and a drizzle of white chocolate, these are sure to be a hit with everyone!
Ingredients
- 1/4 c. butter
- 3/4 c. sugar
- 1 egg
- 1/8 tsp. salt
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1 1/3 c. flour
- 1 cup heavy whipping cream
- 8 oz. cream cheese, softened to room temperature
- 3/4 c. powdered sugar
- various fruits
- melted white chocolate (for drizzling)
Instructions
- Preheat oven to 350 degrees.
- Cream first two ingredients.
- Add egg, salt, cream of tartar, baking soda, and flour.
- Mix until combined.
- Press firmly together, roll out the dough, and cut out circles.
- Place circles on greased pan and bake for 15-18 minutes (or until golden brown).
- After removing from pan, chill in refrigerator for 30-40 minutes.
- Whip heavy whipping cream until fluffy. Chill for 10-15 minutes.
- Beat cream cheese until smooth.
- Add powdered sugar.
- Mix until combined.
- Add in whipped cream.
- Spread the whipped topping mixture onto the cooled crusts.
- Chill for an hour.
- Arrange fruits in desired pattern onto pizzas.
- Drizzle with melted white chocolate.
- Chill for 1-2 hours before serving.

I tried these out for our big family 4th of July party yesterday and my grandkids loved them! I like that it’s a slightly healthier option to the classic chocolate chip cookies, although I need to get an upholstery cleaning because of the deadly mixture of a toddler and blueberries! Totally worth it and I plan on making them again, thank you so much for sharing!!
These are fun and most of all delicious! Very easy to make too!
Some information lacking from this. How thick to roll the dough, approximate yield, how much space to give them on the cookie sheet.
I added 1 tsp of vanilla extract. I blindly rolled out the dough amd they came out fine. I didnt have any cookie or buscuit cutters handy so I used the top of a cup to cut the dough and that got me about 12. I spaced them about an inch apart and they spread into each other so more space was needed. They were still delicious and were a big hit at the party I took them to.
