QUICK BUTTERFINGER BUTTERCREAM
This quick butterfinger buttercream is a very simple recipe that is amazing enough to wow your friends and family on a special occasion, but also easy enough for any day! Use it to top cupcakes, brownies, cookies, cake….. whatever you choose! I like to use it to top my favorite chocolate cupcakes and then finish it off with a piece of a butterfinger candy bar.
When it comes to whipping up batches of frosting… which I do very often!… there’s nothing like a KitchenAid mixer doing all the work for you! I have the cobalt blue Professional 600 Series, that was a wedding gift from my aunt and cousin a couple years ago. It is the BEST EVER!!!!
You’ll start by beating your softened margarine and shortening together, along with vanilla extract, until it all smooth and creamy. Then slowly add in the powdered sugar. This is where the KitchenAid comes in super handy. I can set it to low and just slowly dump the sugar in and I don’t have powdered sugar flying everywhere! haha
After I add my desired amount of milk or cream, I like to beat it on high for several minutes. This gives it a very light and whipped taste. If you feel it is too thick for your liking, add a little more milk or cream. Just add small amounts at a time so you don’t end up with a runny batch of frosting that doesn’t stay in a nice mound on top of a cupcake. 🙂
Now’s the time to add in the chopped butterfinger. I usually use the fun size candy bars. Open each one, place them in a ziploc bag, and just beat them gently with the back of a spatula. They will crumble very easily. Then slowly mix them into your frosting and you have a bowl of absolute yumminess!!!
