Here’s a fresh kale salad that has garlic massaged into it! You’ll love it!
Who loves salads? I eat at LEAST one a day – usually my lunch is a salad with a protein, and almost every night we have salad with dinner.
There’s something refreshing about eating fresh greens and knowing you’re getting so many health benefits. Then add fresh garlic into the mix, and you pretty much have a cure-all recipe, haha. š (When my husband is getting a sore throat or a head cold, I add raw garlic to his food and we usually nip that cold in the bud! Raw garlic does wonders! Try adding a couple extra cloves to this massaged kale recipe if you’re coming down with something.)
HERE’S HOW TO MAKE SIMPLE GARLIC-INFUSED KALE SALAD:
1. Prepare the garlic oil
Peel and mince 1-2 garlic cloves (or more, if you’re trying to get rid of a cold or sore throat!). Pour just enough olive oil over the garlic to cover it. Let mixture sit and infuse while you prepare the kale.
2. Prepare the kale
Fold kale in half and cut the leaves off the stem. Discard all stems, then wash the leaves thoroughly. Chop the kale into bite-sized pieces.
3. Massage the kale
Kale is a tough green, but massaging it for 3-4 minutes does wonders to soften it. If you haven’t tried it yet, you’ll be surprised at the difference it makes!
Now is when you need the garlic oil you made in step one. Drizzle it all over the kale. If you’re sensitive to raw garlic, you can leave the minced garlic behind and just use the oil, and you’ll still get a nice garlicky flavor! We love garlic, so I don’t leave any of it behind. š
Start massaging the garlic oil into the raw kale, and continue doing it for 3-4 minutes. Your kale will reduce by about half.
4. Season the kale salad
Add a splash of red wine vinegar, then just a little sprinkle of salt and pepper. Mix 1 teaspoon dry mustard with 1/4 c. grated Parmesan cheese and sprinkle that over the salad.
You can also add in as many other veggies as you like!

Simple Garlic-Infused Kale Salad
Ingredients
Fresh kale
1-2 garlic cloves
olive oil
red wine vinegar
salt & pepper
1 t. dry mustard
1/4 c. grated Parmesan cheese
Instructions
Mince 1-2 garlic cloves, and add just enough oil to cover it. Let the mixture sit and infuse.
Wash kale and remove stems. Chop into bite-sized pieces.
Drizzle the garlic oil mixture over the kale, and massage it into the kale for 3-4 minutes, until the kale has softened and reduced by about half.
Season the kale salad with just a splash of red wine vinegar, and a sprinkle of salt and pepper.
Combine dry mustard with Parmesan, and sprinkle it over the salad.
Toss until combined, and enjoy!
