Simple Pasta Salad
This simple pasta salad is so delicious and fresh! I love pairing this pasta salad with some grilled meat for the perfect summer meal!
At my house we love fresh veggies and summer days! Our baby girl is almost due and we are trying to enjoy and cherish the last few weeks as a family of four. This simple side can be thrown together in just a short time and lasts us a few meals, giving me more time with my little guys and a little more time off my swollen feet. 😉
This simple pasta salad is loaded with pepperoni, mozzarella, olives, peppers, tomatoes, and cucumber. Toss it all together with some Italian dressing and it’s a flavorful pasta salad!
I like to sprinkle on some grated parmesan cheese just before serving!!

So, for this simple pasta salad, you can add more or less veggies based on your family’s taste! Sometimes I throw in some chopped broccoli… or green onions… The leftovers are perfect for lunch the next day too! This recipe makes a good sized bowl and is great side to take to family get togethers and backyard parties!
Simple Pasta Salad
Ingredients
- 12 oz box, tri color rotini
- 1 cucumber
- 1 yellow pepper
- 1 red pepper
- 3 roma tomatoes
- 1 can olives, drained
- 6 oz mozzarella cheese
- 1 cup pepperoni
- 1 cup Italian dressing
- grated parmesan cheese (for serving)
Instructions
- Cook noodles according to package. Rinse with cold water until cooled.
- Chop the vegetables, cheese and pepperoni.
- Toss everything together and refrigerate until chilled.
- Sprinkle with parmesan just before serving.
