Easy sweet potato hash recipe!
Are you always looking for a new easy weeknight meal to put on the menu? I love new recipes, but finding exciting ones that still don’t require a ton of time and effort can be difficult. This easy sweet potato hash recipe is a new weekly favorite of ours!
I came up with this sweet potato hash using ingredients that I already had on hand, and it is jam packed with flavor but so simple and easy. It only uses 5 ingredients, and takes 1/2 hour from start to finish. I know those types of recipes can be very helpful, especially during these busy back-to-school days!
Sweet potatoes are so healthy for you. They are packed with nutrients, but kids still love them since they have that irresistible sweet flavor. We enjoy serving this meal for either breakfast, lunch, or dinner! For brunch, it would be delicious paired with a sweet treat like this easy moist Banana Zucchini Bread, or our AMAZING Maple Pecan Coffee Cake.
And here is a simple Roasted Sweet Potato side dish to accompany any meal!

What goes into a sweet potato hash?
- 2 large sweet potatoes, diced
- 1 vidalia onion, diced
- 1/2 bag frozen pepper and onion mix (or fresh chopped peppers)
- 1 tsp. Kinder Red Garlic seasoning
- 1 package fresh Italian sausages
How do you make sweet potato hash?
- I started by dicing my sweet potatoes into small 1/2″ cubes. I also diced my sweet onion. At our house, we love onions, but if you don’t, you can skip the fresh onion, and just use the pepper/onion frozen mix instead.
My husband never used to like sweet potatoes, he always used to think of them as a sweet sugary dish. But with savory spices and salt on them, he realized he actually loves them!
2. I drizzled olive oil into a large skillet, and heated the pan over medium heat. I then put the diced potatoes, diced onion, and the frozen veggie mix, and then sprinkled the Kinder seasoning over the top. I then drizzled with olive oil again, and stirred gently to coat everything.
We recently discovered these Kinder seasonings – and boy are they good. We get ours at Walmart, you can also find them on Amazon or Sams. We have tried several of them, and they’ve all been super good! This Steakhouse Buttery Blend is soooo good.
3. Next I placed the Italian sausages on top of the veggies, and covered with a lid.
4. I let everything cook for about 15 minutes, while stirring gently every 5 minutes.
5. After 15 minutes, I removed the lid and cooked for another 15 minutes. By this time my vegetables were tender and the potatoes were getting brown and caramelized on the edges, yum!
6. I removed the potato mixture from the pan and then browned the Italian sausage to give it a crispier skin. Make sure that your sausage is heated to an internal temperature of 168 degrees Fahrenheit before removing from the pan.
I love how colorful and enticing this dish looks. My 1 and 2 year old were ready to dig in and taste all the pretty colored vegetables. And, everything was already pre-diced, so I didn’t even have to cut their food up! 🙂
Sweet Potato Hash with Italian Sausage
Savory sweet potato hash with crispy Italian sausage. Easy weeknight meal.
Ingredients
- 2 large sweet potatoes, diced
- 1 Vidalia onion, diced
- 1/2 bag (about 8 oz) frozen pepper and onion mix
- 1 tsp. Kinder Red Garlic Seasoning
- 1 package Italian sausages
Instructions
- Dice sweet potatoes and onion into 1/2" cubes.
- Drizzle large skillet with olive oil, and heat over medium heat.
- Add potatoes, onions, and frozen veggie mix.
- Sprinkle seasoning over the top, drizzle a bit more oilve oil, and toss gently to coat.
- Place Italian sausages on top of veggie mixture.
- Cover and cook over medium heat for 15 minutes, stirring gently every 5 minutes
- Uncover and continue to cook while stirring.
- When vegetables are tender and starting to brown, remove from pan.
- Brown sausages in skillet. Make sure that they have an internal temperature of 168 degrees Fahrenheit before removing from pan.
