The Best Easy Roasted Baby Carrots Recipe

Just a few spices, a little olive oil, carrots and a hot oven and you are all set! After roasting on high heat for about 25 minutes, these carrots are sweet, salty, golden brown and fork tender. This is one of my absolute favorite ways to cook fresh carrots. My 5 kids literally can’t stop eating them! šŸ™‚ (You can use whatever kind of raw carrots you’d like. If using whole carrots, just slice them down to thin spears.)

 I roast them for about 25 minutes at 400 degrees. But sometimes, I’ll leave them in a few minutes longer if they are not browned quite enough. Taste them and give a little more salt if needed. Some people enjoy carrots with a maple syrup or brown sugar glaze, but the natural sugars in carrots make them naturally sweet, so I like to counter that with the garlic and salt and black pepper. It is so yummy when you can taste the sweet and salty combination.

Easy Roasted Baby Carrots

Ingredients

  • 1 bag baby carrots
  • 1/4 tsp garlic powder
  • 1/2 tsp dry dill weed
  • salt
  • pepper
  • drizzle of oil

Instructions

  1. Preheat oven to 400°.
  2. Spread carrots in a single layer on roasting pan. (Use parchamnt paper for easy clean up!)
  3. Sprinkle with spices and a drizzle of oil. Salt and pepper generously. Mix until evenly coated.
  4. Roast for 25-35 minutes, or until carrots are lightly browned.
